Ingredients:
- eggs: 4
- large egg yolks: 6
- key lime juice: 1/2 cup, plus more for garnish
- sugar: 3/4 cup + 2 tablespoons (plus extra for the pie shell)
- butter: 1/2 stick, melted
- graham cracker crumbs: 3/4 cup plus 2 tablespoons for pie shell
- all-purpose flour: 1 and 1/2 teaspoons, for dusting crust
Directions:
Preheat your oven to 350 degrees F (175 degrees C). Rinse the key limes. Press them through a fine mesh sieve into a mixing bowl.
Whisk in the sugar and yolks until smooth.
