Preheat your grill or stovetop skillet to medium-high heat.
Season both sides of each perch fillet with salt and pepper. Place them on the preheated surface, cook for about 3 minutes on one side until you see light golden brown spots, then flip carefully using a pair of tongs or fish turner. Melt butter in a small pan over medium heat.
Add minced garlic cloves to the melted butter and sauté for about 1 minute until fragrant. Pour this mixture onto each fillet while on top, allowing them to absorb it fully. Remove from direct heat after a few minutes so as not to overcook.
