Preheat the grill or a skillet to medium-high heat.
Combine lamb meat, red onion (quartered), green bell pepper pieces, minced garlic, parsley leaves and lemon zest in a bowl. Add olive oil while stirring until well coated.
Shape the mixture into skewers of equal size to ensure even cooking.
Place lamb kebabs on preheated grill or skillet, brushing them with more olive oil occasionally as they cook for about 10-15 minutes per side until internal temperature reaches a minimum safe threshold and desired doneness is achieved.
Remove from heat. Allow the skewers to rest for at least 5 minutes before serving.
