Ingredients:
- Potatoes: 2 large
- Onion: 1 medium, finely chopped
- Eggs: 2 large
- Salt: to taste
- Black pepper: to taste
- All-purpose flour or matzo meal (for coating): 1/2 cup plus 1 tablespoon, for dredging latkes before frying
- Vegetable oil: For frying; about 4 cups (8-ounce) vegetable oil or other neutral cooking fat of choice like lard, peanut oil, or clarified butter
Directions:
Peel and grate the potatoes. Drain them in a colander.
In a large bowl combine drained shredded potatoes with finely chopped onion, eggs, salt, pepper, flour or matzo meal for coating, mix well to coat all ingredients thoroughly and let sit 5 minutes before proceeding.
