In a small bowl, dissolve the yeast in warm water. Let stand until foamy (about 10 minutes). Into this mixture stir olive oil.
Stir into flour to form dough on lightly floured surface
knead for about 8-10 minutes by hand or with mixer equipped with dough hook, adding a little extra all purpose flour if necessary. The amount of additional flour needed will depend upon the humidity in your area and how wet the original recipe was.
Place into an oiled bowl (or inside plastic wrap), turning to coat
cover tightly with lightly greased plastic or a clean kitchen towel, then let rise for about 1 hour at room temperature until doubled in bulk.
