Ingredients:
- Ground cacao beans: 1 cup
- Blood honey or agave syrup: 3 tablespoons
- Freshly ground black peppercorns: 1 teaspoon
- Dried chili pods or powdered red bell pepper: 2 tablespoons
- Cinnamon sticks and ground cinnamon: 1 stick + 1/2 teaspoon, respectively
- Whole cloves or powdered allspice: 3-5 whole pieces or a pinch of ground spice
- Star anise pods and star anise extract, optional for flavor depth: 2 large pieces + 1/4 teaspoon (if using)
Directions:
In a heavy bottom saucepan or Dutch oven over medium heat, combine cacao beans and honey with enough water to cover. Simmer for about 30 minutes until the mixture thickens.
Strain through cheesecloth into a bowl
discard solids.
