Peach Cobbler

Ingredients:
  • Fresh Peaches: 6 ripe peaches, peeled and sliced
  • All-purpose flour: 1 cup plus 2 tablespoons for dusting
  • Brown sugar: 3/4 cup, packed
  • Ground cinnamon: 1 teaspoon
  • Granulated sugar: 2 tablespoons for topping
  • Unsalted butter, cold and cubed: 3/4 cup plus 1 teaspoon for dough; softened into mixer bowl with a stick of butter equivalent at room temperature is also fine
  • Vanilla extract: 2 teaspoons
Directions:

Preheat oven to 400°F (about 200°C). Lightly butter a deep baking dish or cast iron skillet.

In a large bowl, mix the peaches with brown sugar and cinnamon until they are evenly coated. Transfer this mixture into your prepared baking vessel.
