Ingredients:
  • Ground lamb or beef: 2 pounds
  • Rice (short or long grain): 3 cups cooked, uncooked
  • Parsley: 1 cup chopped
  • Dill: 1/2 cup chopped
  • Onion: 1, finely minced or grated
  • Olive oil: 3 tablespoons plus extra for cooking and drizzling on top
Directions:

Preheat oven to 180°C (350°F). Lightly grease a baking dish with oil. Set aside.

In a large mixing bowl, combine the ground meat, cooked rice, parsley, dill, onion and salt & pepper until well mixed.

Wrap heaping tablespoons of mixture into small packets to resemble walnut-size balls (each will be about 1/4 cup). Set aside.

Place the meatballs in a single layer onto the prepared baking dish. Drizzle each ball with olive oil and press down lightly so they make good contact on the pan.

Bake for about 30-40 minutes, or until cooked through (internal temperature should reach at least 165°F). Halfway during baking time, carefully flip over each meatball with a spatula to ensure they brown evenly.

Remove from oven and serve warm. Enjoy!
