Ingredients:
  • Long grain rice: 2 cups
  • Chicken broth or water: 3 cups
  • Olive oil: 1 tablespoon
  • Onion, finely chopped: 1 large
  • Garlic cloves, minced: 2-3
  • Bay leaf: 1
  • Ground cinnamon: 1/2 teaspoon
  • Allspice berries, crushed (or ground): 1/4 teaspoon
  • Cardamom pods: 3-5 lightly cracked seeds or 1/2 teaspoon powdered cardamom
Directions:

Preheat a large skillet over medium heat. Add olive oil and let it warm for about one minute.

Add onions, garlic, bay leaf, cinnamon, allspice berries or powdered cardamom to the pan. Stir frequently until they turn translucent (about 3-5 minutes).
