  • Eggs: 4
  • Potatoes: 3 large or about 500g peeled and thinly sliced
  • Onion: 1 medium, finely chopped (optional)
Directions:

Heat a little oil in a large non-stick frying pan or skillet over a low heat.

Add the sliced potatoes and onion if using them. Fry for about 10 minutes until they are soft but not coloured.
