Ingredients:
  • Pumpkin Seeds: 1/2 cup
  • Peanuts: 1/2 cup
  • Almonds: 1/4 cup
  • Walnuts: 1/4 cup
  • Chocolate Skins (from unsweetened chocolate): 2 ounces, finely chopped
  • Dried Ancho Chile: 4-6 pieces
  • Guajillo Chile: 3-5 pieces
  • Cinnamon Stick: 1 piece
  • Bay Leaf: 2 leaves
  • Allspice Berries (Pumpkin seeds): 4-6 berries, crushed
  • Cloves: 8 pieces
  • Ancho Powdered Chocolate (optional):
  • Sugar: 2 tablespoons plus extra for rolling meatballs and tamales
Directions:

Rinse the dried chilies under cold running water, remove seeds if desired.

Toast the nuts in a dry skillet over medium heat until lightly browned. Cool slightly and roughly grind into small pieces.
