Season both sides of the steaks with salt, pepper and garlic powder.
Heat a cast iron skillet over high heat until it's very hot. Add olive oil to coat the bottom surface of the pan evenly.
Place each strip in the heated skillet one at a time and sear for 1-2 minutes on both sides, or until you reach your desired level of doneness (medium rare is typically about 2-3 minutes per side).
Let steaks rest for a few minutes before slicing thinly against the grain to serve.
