Ingredients:
  • Beef Brisket: 500 grams
  • Fresh Coriander Leaves (cilantro): 1 cup, chopped
  • Lemongrass: 3 stalks, bruised and sliced thinly
  • Galangan (whole star anise): 2 pieces
  • Cinnamon Stick: 1 piece, broken in half
  • Black Cardamom Pods (optional for authenticity): 2 pieces
  • Star Anise Powder or ground Star Anise: 1 teaspoon, optional to taste
  • Red Bean (adzuki): 20 grams dried beans soaked overnight and cooked until tender
Directions:

Combine the Bruised lemongrass, Galangon, Cinnamon Stick, Black Cardamom Pods (if using), Star Anise Powder or ground star anise in a large pot.

Add water and bring to boil. Once it starts simmering, reduce heat so that the flavors can infuse into the broth without continuously rolling bubbles.
