Ingredients:
- Beef Brisket: 500 grams
- Fresh Coriander Leaves (cilantro): 1 cup, chopped
- Lemongrass: 3 stalks, bruised and sliced thinly
- Galangan (whole star anise): 2 pieces
- Cinnamon Stick: 1 piece, broken in half
- Black Cardamom Pods (optional for authenticity): 2 pieces
- Star Anise Powder or ground Star Anise: 1 teaspoon, optional to taste
- Red Bean (adzuki): 20 grams dried beans soaked overnight and cooked until tender
Directions:
Combine the Bruised lemongrass, Galangon, Cinnamon Stick, Black Cardamom Pods (if using), Star Anise Powder or ground star anise in a large pot.
Add water and bring to boil. Once it starts simmering, reduce heat so that the flavors can infuse into the broth without continuously rolling bubbles.
