Ingredients:
  • Milk: 1 quart
  • Kefir grains: Approximately 2 tablespoons, or as per kefir manufacturer's instructions if using a packet of dry cultures
Directions:

In a clean glass jar with an air-tight lid (like Mason jars work well), combine the milk and kefir grains. The ratio should be roughly 1:1 by volume.

Seal the container tightly, but not completely hermeticallyβ€”some headspace is needed for fermentation to occur.
