Ingredients:
  • water: 2 cups
  • sugar: 1 cup
Directions:

In a medium saucepan, combine water and sugar over medium heat.

Stir the mixture until the sugar is completely dissolved. Once combined reduce to low heat. Allow it simmer for about 5-7 minutes or till small bubbles start forming around edges of pan, it should not boil vigorously under any circumstances as this will prevent setting granita properly.

Remove from heat and allow the mixture cool down. Once cooled, strain through a fine mesh sieve into an ice tray. Place in freezer until partially frozen (about 45 minutes). Then stir every thirty minutes with fork or chopstick to break up forming crystal as much as possible.

Continue this process for several hours till completely set, it should look like a slush when ready.
