Roasted Duck

Ingredients:
  • Whole duck: 1
  • Olive oil: 2 tablespoons
  • Fresh rosemary: 4 sprigs, chopped
  • Thyme leaves: 1 teasoptionally crushed garlic clove (optional)
Directions:

Preheat your oven to 400 degrees Fahrenheit.

Rub the duck all over with a mixture of olive oil, chopped rosemary and thyme. Optionally add crushed garlic clove for additional flavor.

Place the prepared duck on a baking sheet or in a roasting pan.

Roast uncovered until cooked through (approximately 2-3 hours, depending on size of your bird).

Allow to rest before carving and serving.
