Ingredients:
  • Granulated Sugar: 1/2 cup
  • Unsalted Butter: 3 tablespoons
  • Dark Chocolate (70%), chopped: 1/2 cup plus 4 squares for whipping cream
  • Heavy Cream, cold: 1 and 3/4 cups
  • Large Egg Yolks: 5 yolks
  • Fresh Vanilla Extract: 1 teaspoon
Directions:

Melt the chopped chocolate with 2 tablespoons of butter in a heatproof bowl set over a pan of simmering water, stirring until smooth.

Whisk together sugar and yolks then add them to the melted mixture. Set aside at room temperature for about an hour while preparing cream filling.
