Ingredients:
  • Tomatoes: 500 grams
  • Cucumber: 300 grams
  • Red bell pepper: 100 grams
  • Red onion: 50 grams
  • Vinegar (sherry or wine): 3 tablespoons
  • Olive oil: 4 tablespoons
  • Salt and pepper to taste:
Directions:

In a blender, combine the tomatoes, cucumber, red bell pepper, and red onion. Blend until smooth.

Strain the mixture through a fine mesh strainer into a bowl to remove any seeds or pulp remaining in the soup. Transfer it back to the blender along with vinegar (sherry/wine), olive oil, and seasonings. Blend until smooth.

Chill for at least 1 hour before serving cold.
