Preheat your oven to 275 degrees F (135 degrees C). Rub the roast generously with kosher salt, black crushed peppercorns and whole cayenne or black pepper. Let it sit at room temperature for about half an hour.
Heat a large oven-proof skillet over medium high heat on your stovetop (preferably cast iron). Sear the roast until browned, turning to brown thoroughly all sides - this should take 10 minutes total. Transfer it into the preheated oven and cook for about 2 hours.
