Preheat grill to medium-high heat.
Season tilapia fillets with salt and pepper. Brush both sides of each fish filet lightly with olive oil.
Grill the Tilapia for about 3-4 minutes on each side or until opaque throughout, making sure not to overcook (fish should be flaky but still slightly translucent in the center).
While fish is grilling, prepare Mango Salsa: In a small bowl combine mango cubes, red bell pepper, cilantro leaves and onions. Drizzle with lime juice.
Once Tilapia has finished cooking to perfection remove from heat but keep warm under foil or in the oven at low temperature until ready to serve.
Serve grilled tilapia over a bed of Mango Salsa for an exotic, flavorful meal.
