Ingredients:
  • halibut fillet: 1 pound
  • lemon zest and juice: 1 tablespoon zest + 2 tablespoons juice
  • garlic cloves, minced: 3-4
  • dill weed (fresh or dried): 1/2 teaspoon

Directions:

Preheat the oven to 400 degrees F (200 degrees C). Lightly oil two pieces of aluminum foil with cooking spray. Place one halibut fillet on each piece, season both sides generously with salt and pepper.

In a small bowl mix together the lemon zest, juice from half a lemon (save some for later), minced garlic cloves, dill weed, additional freshly ground black pepper to taste.
