Ingredients:
- dry red kidney beans: 1 cup
- rice: 2 cups
- onion: 1, chopped
- green bell pepper: 1/2, diced
- garlic cloves: 3-4, minced
- unsalted butter or vegetable oil: 2 tablespoons
- cayenne pepper powder: 1/4 teaspoon, optional for spice level adjustment
Directions:
Rinse and soak the dry red kidney beans in water overnight or use a pressure cooker to shorten this process.
Drain and rinse the soaked (or cooked) beans. In a large saucepan, combine them with enough fresh water for simmering along with rice according to package instructions.
