Red Beans and Rice

Ingredients:
  • dry red kidney beans: 1 cup
  • rice: 2 cups
  • onion: 1, chopped
  • green bell pepper: 1/2, diced
  • garlic cloves: 3-4, minced
  • unsalted butter or vegetable oil: 2 tablespoons
  • cayenne pepper powder: 1/4 teaspoon, optional for spice level adjustment
Directions:

Rinse and soak the dry red kidney beans in water overnight or use a pressure cooker to shorten this process.

Drain and rinse the soaked (or cooked) beans. In a large saucepan, combine them with enough fresh water for simmering along with rice according to package instructions.
