Cajun Gumbo

Ingredients:
  • All-purpose flour: 3 tablespoons
  • Smoked andouille sausage links: 1 pound, sliced into 1/4 inch rounds
  • Venison or chicken (bone-in), cut into cubes: 2 pounds
  • Smoked ham hocks, split and with bone removed: 4 pieces
  • Large yellow onion: 1/2 cup, diced
  • Green bell pepper: 3/4 cups, chopped and seeded
  • Garlic cloves: 6-8 minced
  • Smoked tomatoes (canned): 1 cup, drained and chopped with seeds removed
  • Xanthan gum: 2 teaspoons dissolved in 3 tablespoons of water
  • Rice (long-grain): 4 cups, uncooked and rinsed
Directions:

In a heavy pot or Dutch oven over medium heat, brown the sausage in batches until golden. Set aside on paper towels.

Turn up your burner (to high) now add all other ingredients and stir continuously for about 30 minutes.
