Ingredients:
  • Puff pastry dough: 1 package
  • Whole milk: 1 cup plus 2 tablespoons (for egg wash)
  • Large eggs: 4
  • Sugar granules: 3/4 cup for pastry cream and eclairs, plus extra for coating
  • Unsalted butter: 1 stick (or 1/2 cup)
  • All-purpose flour: 4 tablespoons for roux
  • Milk powdered, unsweetened cocoa powder (for chocolate eclairs): 2 tablespoons optional ingredient
Directions:

Preheat your oven to 400°F. Roll out puff pastry dough and cut into long, thin strips for eclairs.

Line a baking sheet with parchment paper

place the pastries on it leaving space between each strip. Brush lightly with beaten egg wash to achieve golden brown when cooked.
