Preheat the oven to 400°F (200°C).
Season both sides of each partridge bird with salt, pepper and rub them generously all over. Melt half a stick of butter in an oven-proof skillet.
Sauté the minced garlic cloves until fragrant (about 1 minute). If using chestnuts, add to the pan now along with thyme leaves for another few minutes till they start turning golden. Remove from heat and set aside.
Transfer skillet into oven with partridges breast side down
roast in preheated oven until skin is crisp (about 20-30 mins). Let the birds rest for about five minutes.
Turn over to brown underneath and cook a few more minutes. Remove from heat.
Carve at table with sharp knives, slice into quarters or cut along breastbone
use wings as drumsticks.
