Preheat a large skillet over medium-high heat.
In a shallow dish, mix together the salt, black pepper and garlic powder. Coat each frog leg piece with flour to create a thin crust.
Heat olive oil or butter in the preheated skillet until it's hot enough that when you drop one of the coated legs into the pan, bubbles form around it quickly (about 375°F).
Place frog legs flat in the skillet and cook for about 4-6 minutes on each side or until crispy brown.
Remove from heat and let rest a few moments before serving with your choice of sides.
