Roast Turkey

Ingredients:
  • whole turkey: 1
  • unsalted butter: 5 tablespoons
  • fresh thyme leaves: 4 teaspoons
  • kosher salt: 1 teaspoon
  • black peppercorns, crushed: 1/2 teaspoon
Directions:

Preheat your oven to 325°F (163°C). If you have a roasting rack inside the baking dish, set it up for easy turkey flipping later on.

Melt butter in small saucepan over medium heat. Add thyme and crushed peppercorns

cook until fragrant (about 1 minute). Brush some of this mixture under the skin all around your bird, then rub remaining herb/butter mix liberally on outside.

Place turkey breast-side up in roasting pan. Loosely cover with tented aluminum foil and cook for about an hour.
