Ingredients:
- Water: 3 cups
- Sugar: 2 tablespoons (plus extra for boiling)
- Instant Yeast: 1 packet or 2 and a half teassps
- Honey: 4 tablespoons (plus extra for boiling)
- Mashed Banana: 1 medium-sized mashed banana
- Unsalted Butter, Softened at Room Temperature: 4 tablespoons (plus extra for brushing)
- Half & Half or Whole Milk and Cream Cheese Mix: 1 cup
- Large Eggs, Beaten WELL (divided): 2 eggs; divide for brushing on bagels pre-baking & baked egg wash post oven rise.
- Kosher Salt: 1 and a half teaspoons
- All Purpose Flour, for Dusting Surfaces & Sprinkling on Top of Bagels (plus extra): Enough to form an even dough ball; plus some more for sprinkling after baking.
Directions:
In a large bowl, combine the water and 2 tablespoons of sugar along with yeast. Let stand until frothy (about five minutes).
Add mashed banana to mixture in bowl.
Mix honey into batter using spatula or wooden spoon β it will form a thick paste like consistency, stirring frequently so ingredients donβt stick together. This step is crucial for the dough's texture and flavor.
