Mushroom Risotto

Ingredients:
  • Arborio rice: 1 cup
  • Sliced mushrooms: 2 cups
Directions:

In a large pot, sauté the sliced mushrooms with 1 tablespoon of olive oil until they are golden brown.

Stir in the Arborio rice and toast it for about 2 minutes before adding chicken or vegetable stock. Continue stirring regularly.
