- Ripe Avocado: 1
- Quinoa: 1 cup cooked
- Black Beans: 1/2 cup cooked and drained
- Red Bell Pepper: 1/4 chopped
- Cilantro Leaves: 1 tablespoon roughly chopped
- Lime: 2, juiced
- Salt and Pepper:
Directions:
Season the chicken breasts with salt, pepper, cilantro leaves, lime zest or juice.
Cook quinoa as per package instructions. Mix cooked quinoa with black beans and chopped red bell pepper in a bowl.
