Collard Greens

Ingredients:
  • collard greens leaves: 1 bunch
  • vegetable broth or water: 2 cups
  • onion: 1, chopped
  • garlic cloves: 3-4, minced
  • smoked ham hock or bacon: 2 pieces (optional)
  • salt and black pepper: to taste
Directions:

Wash the collard greens thoroughly, remove stems from leaves.

In a large pot or Dutch oven over medium heat, combine ham hocks (if using), onions and garlic. Cook until softened, about 5 minutes.

Add chopped collard green leaves to the pot in batches if necessary so they don’t pile up too high.

Pour vegetable broth or water over greens

add salt and black pepper as desired. Cover with a lid, reduce heat to low.

Simmer gently for 45 minutes to an hour until leaves are tender but still have some bite.
