Ingredients:
  • beef tenderloin: 1 (2-pound) piece
  • duxelles: 1 cup prepared duxelles mixture
  • prosciutto: 4 slices thinly sliced prosciutto, each approximately 6 inches x 3/4 inch wide and long enough to wrap around the beef tenderloin loosely
  • puff pastry dough: 1 sheet ready-to-use puff pastry, chilled (thawed if frozen)
Directions:

Preheat the oven to 400°F. Roll out one side of each slice of prosciutto and line up on a piece of plastic wrap in an 'X' shape, leaving space at both ends for wrapping.

Place the beef tenderloin horizontally across all four pieces of unfolded prosciutto to cover it completely.
