Ingredients:
  • Fresh octopus tentacles: 2 pounds
  • Kosher salt: 1 tablespoon
  • Garlic cloves, minced: 3-4 pieces
  • Olive oil: 2 tablespoons
  • Red wine vinegar or balsamic vinegar: 1 teaspoon
  • Freshly ground black pepper: to taste
Directions:

Rinse the octopus under cold water and pat dry with paper towels. Season it liberally on all sides inside out, especially in between each suction cup.

Heat a large skillet over high heat for about 1 minute then add oil along with garlic cloves (remove them before serving). Place the octopus into the hot pan and sear until browned evenly around its exterior.
