Ingredients:
- Chickpeas: 1 cup
- Burger Buns or Pita Bread: 4 pieces
- Red Onion: 1/2 medium-sized, finely chopped
- Lettuce Leaves: as needed for topping and filling the burger
- Tomato Slices: 2-3, thinly sliced
- Red Bell Pepper (optional): a few pieces or strips for added crunch and color
- Mayonnaise: as desired, for spreading on buns/pita bread
Directions:
Drain and rinse the chickpeas. Pat them dry with a clean kitchen towel or paper towels.
Into a food processor add rinsed, drained beans along with chopped onions (and bell pepper if using). Pulse until combined but still chunky in texture.
