Ingredients:
  • All-purpose flour: 2 cups
  • Baking powder: 1 teaspoon
  • Salt: 1/2 teaspoon
  • Unsalted butter, room temperature: 1 cup
  • Ground cinnamon: 1/2 teaspoon
  • Brown sugar: 3/4 cup
  • Vanilla extract: 1 teaspoon
  • Eggs: 2 large
  • Chocolate chips, semi-sweet or milk variety: 2 cups
Directions:

Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.

In a medium bowl, whisk together flour, baking powder and salt. Set aside.

Using an electric mixer or hand held beaters, cream the butter at high speed until light in color (about 3 minutes).

Reduce to low speed

add sugar, beat for another minute before stopping machine. Stir in cinnamon. Add eggs and vanilla extract

every so often increase mixer speeds briefly.

Add flour mixture all at once

stir until just combined (do not overmix). Stir in chocolate chips with a wooden spoon or rubber scraper. Drop by rounded tablespoonfuls onto baking sheet, spaced about 2 inches apart. Bake for 8 to 10 minutes.

Remove from oven and allow cookies to cool on the pan (batter will seem undercooked but they firm up as they do so). Cool completely before serving.
